
Passion X is part of our Experimental Series, featuring coffees primarily from our farm in Jajarkot. The cherries are selectively picked during peak harvest, often with a Brix level above 20 percent, giving us the ideal starting point for exploring advanced processing techniques. We experiment with various variables - from extended fermentation to slow drying under controlled temperatures - creating favorable conditions for healthy microbial activity that enhances complexity in the final cup. This series reflects a personal approach to processing, where intention meets curiosity, and every decision is made to bring out specific attributes in the coffee. Passion X is the result of a collaboration between a passionate farmer, a processor, a roaster, and an artist - all moving forward with a shared desire to create meaningful impact.
