This series of naturally processed coffees follows a traditional approach where ripe cherries are dried on standard food-grade, fast-drying beds. The process is left untouched - no interference, no controlled fermentation. Instead, the cherries are allowed to ferment naturally, influenced only by the local climate and ambient conditions. This creates a unique microbial environment, encouraging native yeasts and bacteria to interact with the fruit in their own way. The result is a distinct expression of natural fermentation, producing vibrant and complex flavors that reflect both the process and the place.
