
We first connected with cherries from Kallabari, Nuwakot through social media, when a young woman brought us 12 kilograms of ripe cherries. Intrigued by the opportunity, we decided to apply our hybrid process - an evolving method under Bariko’s experimental series where we aim to balance the best of both traditional and modern techniques. Though the ideal ratio of pulp to parchment is still being refined, this small batch allowed us to explore and learn. We carefully processed the cherries and curated around 1.2 kilograms of specialty green beans. The coffee was brewed exclusively at our Coffee and Art station, where it offered a unique expression of collaboration, curiosity, and craft.
